Basic Simple Syrup Recipe (Plus Flavor Variations)

Simple syrup is so simple, but it can make all the difference in everyday kitchen moments. From mixing it into a specialty cocktail, to brushing it onto cakes to keep them tender and moist, or adding a splash to your iced coffee first thing in the morning — it’s one of those small homemade touches that feels special without being complicated.

Once you master a basic 1:1 recipe, you can easily turn it into something even more special by infusing herbs, fruit, or spices. After the sugar has dissolved and you’ve removed the saucepan from the heat, simply add your flavoring ingredient of choice. Let it steep right there in the warm syrup for at least 30 minutes — or longer if you have the time. The longer it rests, the deeper the flavor.

When you’re finished steeping, place a fine mesh strainer or a layer of cheesecloth over a bowl or measuring cup and carefully strain out the herbs, fruit, or spices. Pour the finished syrup into a clean jar, and it’s ready to use.

One of my personal favorites has been a raspberry mint combination. It’s fresh, sweet, and perfect stirred into a gin cocktail — especially something like a gin Moscow mule for a bright, summery twist. You could also try vanilla for coffee, strawberry or rhubarb for seasonal drinks, or lemon for something clean and fresh. Truly, the options are endless, and that’s part of the beauty of it.

Recipe - Simple Syrup

Ingredients

  • 1 cup granulated sugar
  • 1 cup water

Instructions

  1. In a small saucepan combine the sugar and water.
  2. Turn up to medium heat.
  3. Stir until the sugar is completely dissolved. 
  4. I like to bring it up to a boil quickly and then take it off of the heat.
  5. Pour into a clean mason jar and put a lid on it

Notes

I recommend storing in the refrigerator for optimal freshness. It will last for 3-4 weeks.
